What is your favorite way to enjoy delicious ripe tomatoes?
If you ask me, my favorite is in a fresh caprese (pronounced CAH-PRAY-SAY) salad. It is the perfect combination to accentuate the flavor of the three main characters: tomatoes, mozzarella and basil. All you need to do is drizzle a little olive oil and a pinch of salt, and it is ready!
Why the name Caprese?
The name harkens to its origins - the island of Capri, off the Gulf of Naples. There are a couple of versions about who first put the delicious combination together. One is that a bricklayer, in search of the perfect sandwich, put these three ingredients together. The second is that the iconic Grand Hotel Quisisana created the dish to amaze one of its guests; Filippo Tommaso Marinetti, a leader of the Italian Futurist movement in the early 1900s.
Whichever it is, I am grateful as it is a go to meal for me multiple times a week during the tomato season, using different types of tomatoes, different types of mozzarella, making it into a sandwich or as a topping for pizza. It's a winner each time!
